Stavros was born in New York City, raised in Englewood Cliffs, N.J. He grew up in the restaurant “business” by way of his father owning restaurants. He swore he would not go into the business having seen first hand the hard work and long hours it involves. He attended N.Y.U. business school with the idea of going into finance. Somehow he ended up back in the restaurant business realizing that’s what he truly loved to do. He fulfilled a longtime dream when he and his brother Peter (as executive chef) took over the Sonoma Grill in East Rutherford. It was there that he developed his love and expertise of wine. In 2005 he opened Varka where he runs the front of the house.
