


is classically trained at Johnson & Wales Culinary Institute and has twenty years of experience leading some of finest kitchens of Manhattan and Europe including Avra Estiatorio, La Cote Basque, Le Bernadin, Hudson River Club, Hotel Pierre and Stucki Bruderholz in Switzterland. Mr. Georgiades has been praised for superb food by many critics from numerous New York City and New Jersey newspapers and magazines, including "Best Whole Fish in New York City" by New York Magazine.In addition Mr. Georgiades has had numerous television appearances, being featured on CNN Headline News, the 2004 Olympic Games and WLIW21.
Mr. Georgiades helped open Varka Restaurant in 2005. As a first generation Greek-American, he has an ancestral feel for Varka's core ingredients, and his gourmet background has taught him to let food speak for itself.
